1 can South Style Blackeyed Peas rinsed and drained
1/2 green or red pepper diced
1 tsp garlic diced
1 avocado diced
1/4 cup olive oil
1/4 cup white wine vinegar
1 tsp or to liking diced jalepeno
salt & pepper

Directions:

Mix olive oil, vinegar, and garlic together in a bowl
Add vegetables, mix and let set in refrigerator for a few hours. Serve with Tortilla Scoops.
