2 boneless chicken breasts
1/2 purple onion chopped
1/3 green bell pepper chopped
1/3 red bell pepper chopped,
1 stalk celery chopped
1 lb fresh okra
1 can Hunts Petite Diced Tomatoes
1 can chicken broth
1 bay leaf
Salt & black pepper to taste
1 1/2 T soy sauce

Bring chicken breasts to a boil in 1 cup water and can of chicken broth with bay leaf, then cover and simmer for 3 to 4 hours. Shred chicken. Saute vegetables in about 1 T olive oil with soy sauce until tender. Boil okra in water just to cover until tender. Add drained tomatoes heat through. Combine all ingredients and simmer 30 minutes. Serve over rice.
