1/2 cup almonds, sliced
3 tbsp. sugar

Salad:
12 oz. baby spinach
1 11 oz. can mandarin oranges (drained)
1 cup celery cut in chunks
1 small onion chopped
1 red bell pepper cut in chunks
1 orange bell pepper cut in chunks
1 cucumber cut in chunks

Dressing:
1/4 cup light olive oil
4 tbsp. balsamic vinegar
4 tbsp. sugar
2 dashes of pepper
2 dashes of tabasco sauce
2 tbsp. fresh chopped parsley

Directions:
Directions:
Place almonds and sugar in a small skillet and cook over medium heat until the sugar melts and the almonds are brown. Remove from heat a spread on waxed paper to cool. Chop and mix all salad ingredients together with the mandarin oranges on the top. In a bottle or jar, mix the salad dressing ingredients well. This dressing is best served as a side to the salad rather than mixing it all at one time. I usually adjust the sugar down and the tabasco up.
