2 lbs ground meat
3 lbs Carrots
2 Onions
1 Lg. Bell pepper
1 rib of Celery
2 cloves Garlic
1/2 cup Parsley
1/2 cup Shallot

Directions:
Directions:
Peel and dice carrots. Boil until they are tender. Drain off water. Save a cup of the water. Mash carrots, set to the side. Brown ground meat, drain off grease. Add a little Crisco oil to bottom of pot, cook onions, bell peppers, celery and garlic until tender. Add ground meat and carrots and a little of the water. Salt and Pepper to taste. Cook for about a hour add parsley and shallots. Cook for another 15 minutes. Serve over rice with a salad.
