4 lbs beef stew meat or pork loin, chopped
1 lb dry pinto beans (soaked in water overnight)
2 cloves garlic, chopped
2 T. mild Mexican chili powder
1 T. ground cumin
1 tsp oregano
1 T. salt
1 small can diced green chilies (optional)

Directions:
Directions:
In a crock pot, add the beans first then all the rest of the ingredients. Add enough water to cover everything. Cook on high for about 4 hours. Turn down to low for 2 more hours. Shred meat with a fork and let sit without a lid for about an hour.

Serve with any or all of these: rice, cheese, lettuce, tomatoes, onions, cilantro, avocados, chips or small tortillas. A squeeze of lime tastes great too!
