Guacamole:
1-2 avocados
1 Tbsp. chopped fresh cilantro
2 tsp. lime juice
1 tsp. minced garlic
1/2 tsp. salt
1/4 tsp. pepper

Rub:
1 tsp. paprika
1/2 tsp. dark brown sugar
1/2 tsp. chile powder
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. cumin



1 flank steak (about 1 pound)
olive oil
1 red onion
8 flour tortillas
1 or 2 red, green,or yellow bell peppers

- To make guacamole, scoop out avocado into bowl. Add remaining ingredients. Mash with fork until combined. Cover surface with saran wrap to prevent browning.
- Combine ingredients for Rub. Brush flank steak with olive oil and coat with rub. Let steak stand at room temperature for 20 minutes before grilling.
- Saute sliced red onion, and sliced bell peppers in olive oil or butter over medium heat for about 8 minutes. Grill flank steak over medium-high heat for approx. 5 minutes per side. Wrap tortillas in a foil package. Grill the package over medium heat for 3-5 minutes, turning once.
- To serve, cut flank steak against grain into 1/4 inch slices. Place warm tortillas, meat, veggies and guacamole in separate serving dishes. Create your own fajita and enjoy!
