For special touches on cakes, it's fun to tint or toast coconut. To tint, just dilute a few drops of food coloring in a teaspoon of water and sprinkle over coconut in a bowl. Toss with a fork until the coconut is tinted evenly throughout.
To toast coconut, spread out thinly on a shallow baking pan. Then place in moderate oven (350º) and toast 8 to 12 minutes, or until delicately browned. Stir coconut or shake pan often to toast evenly.
