1 1/4 c. corn oil
2 c. sugar
3 eggs
1 tsp. baking soda
1 tsp. salt
3 c. flour
3 c. chopped peeled apples
1 c. nuts, chopped
2 tsp. vanilla extract

Optional Glaze
1 c. brown sugar
1/2 c. butter (1 stick)
1/4 c. evaporated milk
1 tsp. vanilla extract

Beat sugar and oil. Sift dry ingredients and add to the oil mixture alternately with eggs, beating after each addition. Add vanilla and fold in apples and nuts. Pour into a greased and floured tube pan. Bake at 350 for 1 1/2 hours.
Glaze -- Combine all ingredients in a saucepan and cook over low heat until boiled. Beat while
cooling. Glaze cake.
