"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
2 lbs pork (can be left overs or fresh-if fresh fry until brown-cut up into bite size pieces)
2 large onions diced
10 cloves of garlic-minced
1 large can green chilis-diced
3 fresh jalapeņos - to taste
2 cans of chicken broth or bouillon

Directions:
Directions:
Fry pork in soup pan, add onion & garlic.
Add green chilis, jalapeņos & water - enough to cover ingredients.
Add chicken broth.
Add cumin, garlic powder, salt & pepper to taste.
Simmer for a few hours.
Thicken by making a flour and water rue. I like it to be a thin gravy thickness.

Serve with tortillas, onion and cheese.

Extra chili??

Huevos Rancheros:
Place one large tortilla on a plate. Place 3 fried eggs on top of the tortilla. Cover the eggs and tortilla with the leftover green chili, onion and cheese.
Enjoy!
