1 1/2 c. rice,
4 c. milk, divided,
2/3 c. sugar,
1/2 t. salt,
2 eggs, beaten,
3/4 c. raisins,
2 T. butter,
1 t. vanilla extract

Directions:
Directions:
1. In a medium pan bring 3 c. water to boil. Add rice and stir. Reduce heat, cover and simer 20 minutes.
2. Add cooked rice, 3 c. milk, sugar and salt. Cook over medium heat until thick and creamy (15-20 minutes). Stir in remaining 1 c. milk, beaten eggs, and raisins. Cook 2-3 minutes more, stirring constantly. Remoe from heat. Stir in butter and vanilla. Serve warm.
