1 lg. onion
1 bell pepper
1 stalk celery
2 cloves garlic
8 oz can tomato sauce
1 lb wieners
1 link smoke sausage
2-3 tbsp. oil
2 cups long grain rice
2 1/2 cups water

Directions:
Directions:
Begin by chopping all vegetables. In a heavy pot, add oil. Let oil get hot & add all chopped vegetables. Cook until onions are clear. Add tomato sauce. Cook until oil separates. Add wieners & sausage. Let this cook for awhile. Add rice, water, salt & pepper to taste. Let it come to a boil. When all the liquid is absorbed, reduce heat, cover pot & let rice steam. You may stir carefully as it cooks to make sure it doesn't stick. Serve with white beans or red beans.
