4 salmon steaks (1 in. thick)
2 tsp. lemon juice
2 tsp. freshly ground pepper
2 tsp. watercress sprigs

Watercress sauce:
1 c. low-fat cottage cheese
¼ c. low-fat plain yogurt
¼ c. fresh watercress leaves, chopped
2 tbsp. fresh parsley, chopped
1 tbsp. fresh chives, chopped
2 tsp. parmesan cheese, grated

Oven: On lightly oiled large piece of foil, arrange salmon in single layer.
Sprinkle with lemon juice, and pepper to taste.
Fold foil over salmon and seal; place on baking sheet.
Bake at 400 degrees for 15 minutes or until fish is opaque and flakes easily with a fork.
Microwave: In a microwave-safe dish arrange salmon in a single layer.
Sprinkle with lemon juice, and pepper to taste. Cover with plastic wrap; fold back corner to vent.
Microwave on high for 5 minutes or until fish is opaque and flakes easily with a fork.

Watercress Sauce: In a food processor, combine cottage cheese, yogurt chopped watercress, parsley, chives, and parmesan; process until well mixed, or pass cottage cheese through a sieve and combine with remaining ingredients.

Arrange salmon on plates and garnish with sprig of watercress. Pass sauce separately.
