Butterscotch Pie Recipe

1 1/2 c. Boiling water
1 1/2 c. brown sugar
4 T corn starch
1 1/2 T white sugar
1/4 tsp. salt
3 eggs
1 1/2 T butter
1 tsp. vanilla

Directions:
Directions:
Mix the boiling water and brown sugar and let cool a few minutes.
Dissolve the corn starch in 3 T cold water add white sugar and salt.
Add the corn starch mixture to the boiled brown sugar mixture. Stir and cook until thick. Slowly add 3 beaten egg yolks. Cook slowly.
One minute after removing from hear, add the butter and vanilla.
Pour into a baked pie shell
Use the egg whites for meringue add a little sugar at a time and it will hold its shape better
Return to oven to brown.
