1/2 lb spaghetti
2 tbsp sherry
2 tbsp soy sauce
2 tbsp oyster sauce (available in Asian section of some supermarkets)
1 tsp sugar 1 tsp minced fresh ginger
2 cloves garlic, minced
2 green onions, chopped
1 red bell pepper, slivered
1 small zucchini, cut into 1/4 inch thick rounds
2 cups shredded fresh spinach

Boil noodles until tender, drain.

Meanwhile, combine sherry, soy, oyster sauce and sugar, stir well.

Heat oil in a large non-stick skillet or wok over med-high heat. Add ginger and garlic and cook 1 minute, stirring and pressing with back of spatula to flavor the oil. Add onions, bell pepper and zucchini and stir-fry 1 minute. Add spinach.

Cover and cook 2 minutes, until vegetables are almost tender. Add sauce and stir. Add drained noodles and toss rapidly with 2 spatulas to coat noodles with sauce.
