9 " pie crust
8 oz sausage
4 hard boiled eggs- chopped
1 c. shredded Swiss cheese
1 C. shredded cheddar cheese
3 beaten eggs
1 1/4 c. half and half or cream
3/4 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
Place crust in pie pan - do not prick crust. bake at 350º for 7 minutes.
Sprinkle cooked, drained sausage in pie shell and cover with chopped hard boiled eggs.
Sprinkle cheese over this mixture
Combine beaten eggs, half and half, salt and pepper. Pour over pie crust.
Bake at 350 º for 30-35 minutes
Let stand 10 minutes before serving

This can be made ahead and kept in refrigerator over night. Best if liquid combination is not added until ready to cook.
