Kosher Salt
4 cups elbow macaroni- 1 box
4 eggs, beaten
4 cups evaporated milk
1 stick of melted butter
3/4 tsp cayenne pepper
7 cups grated sharp or very sharp chedder cheese

1/2 cup bread crumbs
1/2 tsp paprika
1/8 cup grated cheese*
1/4 cup of melted butter (1/2 stick)

Prehaeat oven to 350

Bring a large pot of salted water to a boil. Cook Macaroni until tender 10-12 min. Drain, rinse with cold water and set aside.

In a large bowl, beat the eggs with the milk and 1/2 cup of melted butter (1 stick), cayenne pepper, and 2 tsp of salt. Add the drained macaroni to the bowl and add the grated cheese.

Pour into a greased 9x13 pan.

In a small bowl mix the bread crumbs with the paprika, 1/2 cup of melted butter and parmesan. Sprinkle the bread crumb mixture over the macaroni and bake until brown and bubbly, about 40-45 min.

* I don't use the packaged grated cheese. I buy a brick of the sharpest chedder I can find and grate it myself- has more flavor.
