2 Tbsp. powdered chicken stock
1 lb. Velveeta, cut into chunks
2 (14 oz.) cans chicken broth
1 small onion, chopped fine
1/2 cup celery, minced
1/2 cup carrots, chopped fine
1 quart half-and-half

Directions:
Directions:
In a large pan melt the cheese in the broth. Saute together the onion, celery and the carrots. Add to broth mixture heating slowly. Continue to heat slowly and add half-and-half. Do not boil. Soup can be thickened with 2 to 3 Tbsp. cornstarch if needed.
