4-6 shoulder blade lamb chops
4-6 cloves garlic, crushed
2-3 sprigs rosemary, leaves chopped
1 lemon, juiced and zested

1 large container full fat plain yogurt, drained ( I use Dannon);
3 garlic cloves, crushed
1/2 seedless cucumber, shredded and drained
2-3 Tbsp chopped fresh mint or dill
salt and pepper to taste

Rub lamb chops with garlic, lemon zest, and rosemary. Place in non-reactive dish and drizzle with lemon juice. Let marinade 1-2 hours. Grill over medium coals (or indoor grill) until cooked to your liking.

Tzaziki sauce:
Drain Yogurt in paper-towel lined colander until thickened (about 3-4 hours in fridge). Discard liquid.
Grate cucumber and put in strainer. Toss with salt (about 1 tsp) to help drain juice. Discard juice.
Mix drained yogurt with cucumber, garlic, and herbs, add salt and pepper to taste. Mix well, chill until ready to serve.
