6 boneless/skinless chicken breast, pounded flat;
salt/pepper;
1-2 tbsp olive oil;

1 can evaporated milk;
2 tbsp orange marmalade;
1 tbsp dijon mustard;
1/8 tsp red pepper;

1/4 cup slivered almonds- toasted;

rice or potatoes

Directions:
Season flattened chicken breasts with salt and pepper, brown on both sides in olive oil over medium heat.
Rmove chicken from skillet. Add milk, marmalade, mustard, and red pepper and cook until slightly thickened. Return chicken to pan, simmer until chicken is done. Top with almonds. Serve with rice or mashed potatoes.

I adapted this recipe from Southern Living Easy Weeknight Meals by substituting evaporated milk for heavy cream and olive oil for butter, but you can switch it back if you'd like.
