¼ c. tequila
½ c. peanut oil
¼ c. fresh lime juice (juice of one lime)
1 large shallot, finely minced
1 tbsp. finely minced fresh ginger
½ tsp. salt
¼ tsp. freshly ground pepper
24 jumbo raw shrimp, peeled, deveined, tails left on
2 limes, quartered for garnish
1 recipe tequila sunset tomato sauce (recipe in sauce section)

Whisk the tequila, peanut oil, lime juice, shallot, ginger, salt, and pepper in the mixing bowl. Marinate shrimp in the mixture for 30 minutes in the refrigerator. ** Do not marinate shrimp for more than 30 minutes or the acid in the lime juice will start to break down the shrimp meat. Remove Shrimp from marinade. Grill for 2 minutes on each side. Serve immediately.
