Coconut Cream Filling:
1 c. sugar
1/2 c. cornstarch
3 c. milk
6 egg yolks
1/2 tsp. salt
1 tsp. vanilla
1 c. angelflake coconut
1 tbsp. butter

Meringue:
2 egg whites
1/4 tsp. cream of tartar
3 tbsp. sugar or 4 tbsp. confectioners' sugar
1/2 tsp. vanilla

Coconut Cream Filling:
Mix sugar and cornstarch well in saucepan. Add milk and beaten egg yolks. Cook until thick, stirring constantly. Add butter, salt and vanilla. Fold in coconut. Pour into baked pie crust.

Meringue:
Whip egg whites until frothy. Add cream of tartar. Whip them until they are stiff, but not dry (until they stand in peaks). Beat in one tablespoon at a time of sugar. Do not overbeat. Beat in vanilla.

Spread on coconut cream mixture and bake in 400º oven until lightly brown.
