1/4 c. Sugar
2 2/3 c. Flour (use GF flour)
1 tsp. Xanthan gum
1/4 tsp. Salt
2 tsp. Baking powder
2 Eggs
1 1/3 c. Milk
1/2 tsp. Vanilla

Powdered Sugar
Oil (for frying, Peanut oil is great)

Directions:
On stove, start heating approx. 2 inches of oil in a fry pan over medium heat - heat to about 400 degrees.

Sift all dry ingredients into a bowl. Beat eggs, add milk and vanilla and beat again until top is slightly frothy. Slowly add the dry ingredients beating until smooth.

Test batter in oil. Drop small drop of batter into oil. It should take about 45-60 seconds to start browning on one side. Adjust heat accordingly.

Pour batter into wide tipped funnel (or ziplock bag with corner snipped). Let batter drizzle into hot oil starting at the center and expanding outward in circular motion, crisscrossing with last bit of batter.

Brown on both sides. Drain on paper towels. Sprinkle with powdered sugar.
