4-6 Medium-Sized Yellow Squash

3/4 cup Corn Meal
1/4 cup Flour

Directions:
Wash squash and cut ends off. Cut squash in half, longwise and then cut in half longwise again. Slice each quarter into small pie-shaped pieces about 1/4-inch thick. Place slices into large bowl.

When all squash is sliced, pour just enough water over squash to dampen squash. Toss with hands. Pour corn meal and flour over squash and mix well to coat squash.

Heat oil about 1/2-inch deep in large skillet. When oil is hot, spoon enough squash into hot oil to cover bottom of skillet and fry until gold brown. Place cooked squash in bowl lined with paper towels to drain. Sprinkle with salt.
