5 to 7 tart apples such as Ida Reds
3/4 to 1 c sugar
2 tbsp flour
1/8 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
Butter



Crust: ( for 2 crust, 10 inch pie)
2 c flour
1 tsp salt
3/4 c shortening
5 to 7 tbsp cold water

Double filling recipe for 10 inch pie. Mix filling ingredients. For crust, mix ingredients. Divide into 2. Roll between 2 sheets waxed paper. Take top paper off and lay crust on pie plate. Remove bottom paper. Place filling in crust. Top with remaining crust, rolled same as bottom crust. Pinch edges. Rub top with butter and sprinkle on sugar. Cut an "A" in center. Bake at 450º for 10 minutes. Reduce to 350º for 50 minutes.
