4 medium sized eggplant
2 med onions chopped
1 large bell pepper chopped
2 pounds ground beef
2 pods garlic minced
1/2 cup Italian bread crumbs
Salt,pepper
3 tbsp butter
2 tbsp cooking oil.

Directions:
Directions:
Peel, cube and boil eggplant until tender. Drain off water and set aside.
Brown ground beef in sauce pan.
In a 3 qt pot add ground beef, eggplant, onions, garlic and bell pepper, season well. Cook for about 40 minutes or until ingredients are completely smothered.
Pour in a 2 quart casserole dish.
Top with bread crumbs. Place little pats of butter on top of bread crumbs. Bake in oven at 350º for approximately 30-40 minutes.
