1/4 c olive oil
2 c diced chicken meat
1/2 tsp ground black pepper
3 c chicken broth
2 tbsp low-sodium soy sauce
1 c chopped celery or 2 tbsp dried cerely flakes
1 pkg frozen vegetables of your choice
1/3 c cornstarch
1/2 c cold water
1 c cashews
Brown rice

Directions:
Directions:
Heat oil in a large skillet over medium high heat. Saute chicken until it turns white, then season with pepper and add broth, soy sauce, celery, and vegetables. Cover skillet, reduce heat to low and simmer for 5 min. Beat cornstarch and water together in a small bowl, then blend into skillet mixture and heat through until thick and bubbly. Sprinkle with cashews and serve atop brown rice.
