8 lbs medium-size cucumbers
2 c. pickling lime
2 qt. cider vinegar
4-1/2 lbs sugar (5-lb sack minus 1 cup)
1 tbsp. salt
1 tsp. celery seed
1 tsp. mixed pickling spices
cinnamon stick, broken in half

Day 1:
Slice cucumbers in 1/4 to 1/2 inch slices. Dissolve lime in 2 gallons of water. Soak sliced cucumbers for 24 hours.

Day 2:
Rinse thoroughly in clear water, then soak in clean, clear water for 3 hours, covered. Use good enamel, crock or glass for soaking! After 3 hours of soaking, drain. Mix vinegar, sugar and spices together. Place cucumbers in crock or glass jar and pour vinegar solution over them. Let stand overnight.

Day 3:
Put cucumbers and vinegar solution in enamel kettle and boil for 30 to 40 minutes. Pack cucumbers into hot jars and pour hot vinegar solution over cucumbers. Seal with hot lids/rings. Process in water bath for 10 minutes.

Really "pack" the cucumbers in the jars. (I use a flexible scraper.) You only have that much vinegar solution to pour over them for the whole batch of pickles. I can make 2 batches in the 10-gallon crock from the Hackworths! I use a Fiesta plate to cover the crock while soaking.
