12 cups bread croûtons
2 cups celery, finely chopped
1 cup onion, finely chopped
1/2 cup margarine
1 t thyme
1 t rosemary
1/2 t sage leaves
1 t salt
1/2 t pepper
2 cups chicken broth
6 to 7 Cornish game hens

Sauté celery and onion in margarine. Add next seven ingredients and toss with croûtons. Place in a large, well-oiled pan, about 12x20. Using poultry shears, cut game hens down the center breastbone. Remove the backbone by cutting on each side. Brush each half generously on under-side & sprinkle with salt and pepper, Turn pieces over and brush upper-side generously with margarine. Place on top of dressing. Put into 400 degree oven and immediately reduce heat to 350. Bake 1-1/4 to 1-1/2 hours.
