For Pancakes:
3 medium sweet potatoes, uncooked
1 small onion
1 egg, beaten
2 tablespoons flour
1/2 teaspoon salt
Dash pepper
1/4 teaspoon baking powder
vegetable oil for frying

For Cranberry Chutney
1 3/4 pounds tart apples, chopped
1 1/4 pounds cranberries
2 cups light brown sugar
1 1/4 cups cider vinegar
1/2 tablespoon cinnamon
1/2 tablespoon salt
1/2 tablespoon ground ginger
3/4 teaspoon ground cloves
3/4 teaspoon pepper flakes
1/2 pound dark raisins

Place all ingredients in a saucepan and cook 25 to 30 minutes.

For pancakes: Peel and grate the potatoes and onion. Mix in the egg. Combine the dry ingredients together and add to potato mixture. Drop by large tablespoons onto a heated nonstick skillet lightly coated with oil and cook for 4 minutes or so on each side, until pancakes are cooked through. Serve with cranberry chutney, applesauce, apple butter or sour cream and chives.

Make small pancakes for an appetizer. Serve topped with fall chutney. You can make these ahead of time and reheat in the oven at 400º for 5 minutes.
