1 cup butter or margarine
1/2 cup white sugar
1 cup brown sugar, firmly packed
2 eggs
1 tsp vanilla
2 cups flour
2 tsp baking powder
1/2 teaspoon salt
2 cups oatmeal (blended in blender)
1 (12 oz) package butterscotch chips
1/2 cup chopped nuts, if desired

Directions:

Preheat oven to 350º
Cream butter and sugars until light and fluffy. Mix in eggs and vanilla. Sift together flour, baking powder and salt. Add to creamed mixture. Blend thoroughly. Stir in oatmeal and butterscotch chips. Add nuts if desired. Drop by Tbls on ungreased cookie sheet. Bake 10 to 12 minutes. Makes about 3 dozen cookies.

These are very delicious cookies. I love making something like this during the holidays. So good. One of the secrets of this cookie is putting the oatmeal into the blender before adding it to the batter. It makes a smoother batter.
