2 Boneless, skinless chicken breast
Salt and pepper to taste
1/2 Cup Flour
1 egg, slightly beaten with a little water
2/3 Cup coconut
1/3 Cup Bread Crumbs
Butter
Small can pineapple rings

Directions:
Directions:
Cut chicken breast in half. Pound until flattened. Season with salt and pepper. Dip in flour then in beaten egg, then in coconut and bread crumb mixture. Saute slowly in melted butter until golden brown. Place in 350º oven for 8 minutes or until done. While baking chicken, dip pineapple rings in flour. Saute in butter. Serve with chicken.
