1 pie crust
1 c. sugar
1/3 c. buttermilk
1 t. vanilla
3/4 stick margarine, melted
3 eggs, beaten
1 c. coconut

Mix ingredients, pour into pie crust. Bake in 350º oven until golden brown (about 45 minutes).

If you don't want to buy buttermilk, you can make your own. Put 1 T. of vinegar in 1/3 size measuring cup and finish filling it with regular milk. Presto, buttermilk. This is an easy to make pie and can be made at the drop of a hat since the ingredients are things we usually have on hand.
