1 lb sausage
1 tbsp chopped onion
2/3 cup oatmeal
1 egg white
1/4 cup milk



Filling
8 eggs scrambled to soft stage
1/2 cup soft cream cheese (plain or herb)
3/4 cup chopped tomatoes
2 Tbsp chives, dill, onion tops or such
salt and pepper to taste

Directions:
Preheat oven to 350º. Mix first 5 ingredients together and form into 12 cups of a muffin tin. Bake for 12 to 15 minutes. Remove from tin and drain on a paper towel. Scramble eggs until almost done and fold in cheese, tomatoes, and herbs. Finish cooking. Divide into cups and serve hot.
