1 lb. medium shrimp

Lemon-Herb dressing
1 TBSP olive oil
1 ½ tsp ground cumin
3 pita breads split horizontally
1 European cucumber, halved lengthwise sliced
2 large ripe tomatoes diced
¼ cup diced red onion
4 cups mixed salad greens

Directions:
Directions:
Thread shrimp on skewers and brush with 1 tablespoon of dressing. On oiled broiler pan, broil until done about 2 minutes per side. Cool in cup. Combine oil and cumin, brush over both sides of pita bread. Broil until toasted about 1 minute per side. Cool. Break pitas into bite size pcs. Add to bowl with cucumber, tomatoes, red onion and salad. Remove shrimp from skewers place on salad mixture. Add dressing and toss.

Lemon-Herb dressing:
Combine ¼ cup olive oil, 1/3 cup minced Italian parsley, 1 ½ grated lemon zest. ¼ cup lemon juice, ¼ each of minced fresh mint and scallions, 1 clove of garlic crushed, ½ teaspoon each of salt and pepper and ¼ teaspoon of dry oregano.
