4 Tbsp olive oil
3 garlic cloves
1 onion, chopped
2 zucchini, sliced
1 eggplant, peeled and cubed
2 celery stalks, diced
2 carrots, sliced
1 green pepper, sliced
1 red pepper, sliced
8 – 10 mushroom, sliced
3 Tbsp Flour
5 ripe tomatoes, peeled, and diced
Freshly ground pepper to taste
4 tsp fresh parsley
1 tsp oregano
1 tsp basil

Directions:
Directions:
In a large skillet, heat olive oil and sauté garlic and onions. Lightly flour remaining veggies, except tomatoes, and add to skillet. Next add tomatoes, pepper, parsley, oregano and basil. Cook over medium for 30 minutes. Stir, lower flame and then simmer for 1 hour.

Serve with crusty bread or over egg noodles.
