2 1/4 cups seasoned croutons
1 1/2 lb bulk sausage
4 eggs, beaten
2 1/4 cups milk
1 can Cream of Mushroom Soup
1 (4oz) can sliced mushrooms, drained
3/4 tsp. dry mustard
2 cups (8oz) shredded cheddar cheese

To be prepared the night before.
Lightly grease a 13X9X2 inch baking dish. Spread croutons in the bottom of the dish.In a skillet, brown sausage. Drain. Sprinkle over croutons. In a bowl, combine eggs, milk, soup, mushroom and dry mustard. Mix well. Pour over sausage. Cover. Refrigerate overnight.
Remove from refrigerator 30 minutes prior to baking. Preheat oven to 325ºF. Bake uncovered, for 50 to 55 minutes. Add cheese to the top. Bake 5 more minutes or until cheeses melts. Serve plain or with a side of salsa.
