Ingredients:	Ingredients: Crust: 1 c flour 1/2 tsp salt 1/3 c Crisco scant 1/4 c water Filling: 1/2 c sugar 1/4 c flour 2 eggs yolks, slightly beaten 2 c milk 1 tsp vanilla 2 bananas Meringue: 2 egg whites, stiffly beaten 1/4 c sugar coconut (optional)

Directions:	Directions: Mix flour and salt. Cut in Crisco. Add water gradually, (not too much.) Mix with hands and form into a ball. Roll out to fit 1 8 1/2" pie pan. Bake at 425º for 10 minutes. In pan, mix flour and sugar. Add 1/4 c milk and egg yolks. Slowly add remaining milk and bring to a boil stirring constantly. Cook 1 minute. Add vanilla. Place sliced bananas in cooled crust. Cover with pudding mix. Mix beaten egg whites and sugar. Spread over filling. Top with coconut. Bake at 425º for 10 minutes, or until meringue is lightly browned
