Spaghetti
1 stick butter
block of Myzithra cheese
your favorite spaghetti sauce

Directions:
Finely grate Myzithra.

Cook pasta.

Heat spaghetti sauce.

To brown butter, put stick of butter in small frying pan and set heat on med. or med/low. Melt butter and cook for approx 5 more minutes (maybe longer) and watch carefully. Butter will eventually foam on the surface and then the foam will recede and butter will change color from light yellow to a darker amber color. The aroma will change to a delicious nutty, butterscotchy smell. Do not let it get too dark. Remove from heat.

To serve individual plates: Dish up a generous helping of spaghetti. Ladle spaghetti sauce over half of the pasta. On the other half sprinke 2 or more tablespoons of Myzithra cheese over pasta and drizzle browned butter over the cheese.

To eat: mix both sides together OR eat separately--however you like.

This recipe is from the Old Spaghetti Factory and it is called the "Manager's Favorite" on the menu. You can buy the Myzithra cheese in most grocery stores or you can buy it already grated for a higher price directly from the Spaghetti Factory.
