4 oz. saltine crackers (1 sleeve)
1 large tomato or 2 roma tomatoes
3 green onions, finely chopped
1 cup mayonnaise
1 hard cooked egg, finely chopped
salt and pepper to taste
cooked shrimp (optional)

Directions:
Directions:
Just before serving, place saltines in a medium-size bowl. Crush crackers into big pieces. Add tomato, green onions, mayonnaise and egg; mix gently but thoroughly. Season to taste with salt and pepper. Serve immediately as a side dish or top with shrimp to serve as a main dish.
