1-3lb butternut squash, peeled and cubed
1/2 stick butter (4 tbsp)
2 tbsp olive oil
2 onions, chopped
2 cloves garlic, chopped
1 tsp curry powder
salt to taste
1 1/2 qt chicken stock

Directions:
Directions:
Heat butter and oil in large pot, and saute onion and garlic until soft. Add squash, stock, seasonings. Simmer 35 minutes or until squash is very tender. Blend with immersion blender or in regular blender. Serve drizzled with olive oil.
