3/4 cup shortening or margarine
1 cup sugar
1 cup cooked mashed carrots
1 egg
2 cups flour
1 tsp baking powder
1/2 tsp salt
1 cup chopped nuts
grated rind of one orange
3-4 Tbsp orange juice
1 cup powdered sugar
pinch of salt
Directions:
Directions:
Cream shortening and sugar. Beat in eggs. Then beat in carrots. Add dry ingredients. Then add nuts. Bake at 370º for 15 minutes. Frost cookies while still warm from oven. Frosting: grated rind of one orange, 3/4 Tbsp orange juice, 1 cup powdered sugar add pinch of salt. Blend together and frost cookies.
