Ingredients: 1 lb Ground Beef 1 small White Onion, chopped 1 pkg Corn Tortillas 1 bag Shredded Mexican Cheese Shredded lettuce Sour Cream Cooking Oil Taco Salsa (see recipe in book)

Directions:Cook ground beef in large skillet Add onions and continue to cook until meat is browned Add Salt to taste Drain meat and set aside Pour a small amount of oil in a frying pan ( barely enough to cover the bottom of the pan) Fry tortilla in pan until it gets a little bubbly on one side then fold in half and cook both sides until golden brown Repeat this process with each tortilla Fill each tortilla shell with ground beef mixture and place on a baking sheet Sprinkle cheese on top and ground beef Bake at 350 º until cheese is melted Serve with Taco Salsa, lettuce and sour cream |

Notes: When Tony and I first met he wanted to make tacos for dinner. I told him that I didn't really like tacos that much and he said "We'll you've never had my tacos". So, we made them and he was right, I'd never had tacos like this before. I grew up on boxed Ortega tacos which are nothing like these authentic Mexican Tacos. These tacos are delicious and although they are a lot of work, Tony and I have a great time making them together.
