1 T. oil
1/2 to 1 medium onion (preferred taste)
1 red or yellow bell pepper
3 cloves of garlic
1 can of black beans
1/2 c. white rice, uncooked
1 1/2 c. chicken broth
1/8 t. red pepper flakes
1/4 t. thyme
Sprinkle of dried bay leaves
Dash of salt
flour tortillas

Directions:
Directions:
In a large fry pan, saute chopped onion in oil. Add chopped pepper and crushed garlic, and cook slightly more. Add drained beans, rice, broth, and spices. Cook covered for about 15 minutes, or until rice is done. Spoon mixture onto individual tortillas. You can also add a little shredded cheese if desired.
