1 lb skinless, boneless chicken breast
4 c romaine lettuce, torn, washed and dried
2 c shredded carrots
1 ½ c shredded red cabbage
1 bunch green onions, chopped
¼ c fresh cilantro
Chinese Chicken Salad dressing (see recipe in this section of this book)
Wonton Crisps (see recipe in this section of this book)

Directions:
Directions:
Fill a large pot half way with water and bring to a boil
Put chicken in boiling water and turn down heat
Let chicken cook on low heat for 1 hour
Turn off heat and let chicken cool
Drain chicken and pull apart into pieces
Set aside
Wash and dry the lettuce
Tear up into pieces and place in bowl
Add the cabbage,onions,carrots, cilantro and chicken to the mixture
Pour Chinese Chicken Salad dressing over salad and toss to ensure salad is well covered
Sprinkle wonton crisps over the salad and toss again
Serve and enjoy

This is a GREAT salad! My brother-in-law said it's the best salad he's ever had. It's spicy & refeshing and has lots of texture. Enjoy!
