4 skinless boneless chicken breasts
1 minced onion
½ cup olive oil
¼ cup Parmesan cheese
5 minced garlic cloves
Pepper
Garlic Salt
Parsley
1 box manicotti shells
Pesto sauce (homemade or packaged)
Monterey Jack cheese

Directions:
Directions:
Prepare manicotti noodles according to package. Fry chicken in olive oil with minced garlic and onion. Use a liberal amount of garlic salt on chicken and add pepper and 1 teaspoon dried parsley. When chicken is well cooked and onions and garlic are candied, remove chicken from mixture and mince chicken. Return chicken to garlic, onion and olive oil. Remove mixture from heat and add Parmesan cheese. Mix well. Stuff noodles with mixture and place in baking pan. Pour pesto sauce over the manicotti and sprinkle with grated Monterey Jack cheese and cook in a 350 degree oven for 15 – 20 minutes.
