STREUSEL - 2 1/4 cups flour, 1/2 cup powdered sugar, 1 cup
butter or margarine, softened, 4 large eggs, 1 1/2 cups
granulated sugar, 3 tbsp flour, 1/2 cup fresh lemon juice
RASPBERRY SAUCE - 2 cups fresh or frozen raspberries,
1/3 cup granulated sugar, 1/4 cup water, 1 tbsp fresh lemon juice

Preheat oven to 350º.
Mix flour and powdered sugar together. Cut in butter or
margarine. Mix well until it resembles pie dough. Press 1/2
the dough into a 9X9" baking pan. Bake 15 minutes.
Meanwhile, beat together the eggs, 1 1/2 cups
granulated sugar, 3 tbsp flour, and 1/2 cup lemon juice until
well blended, about 1 minute. Pour over partially baked
crust and bake 10 minutes more. Remove from oven and
crumble remaining crust mix over the top. Return to oven
and continue baking 10-15 minutes more, till crumbles are
lightly browned and filling is just set. Remove from oven and
cool in pan until cool enough to touch, then refrigerate until
completely chilled. Cut into 12-16 bars and serve with
raspberry sauce if desired.
RASPBERRY SAUCE - in blender puree raspberries, 1/3 cup
granulated sugar, water and tablespoon of lemon juice until
well blended. Strain through cheese cloth or jelly bag to
remove seeds.
