1-3 oz. box INSTANT Pudding - any flavor
1 egg
1/4. c. oil
1 c. Bisquick Baking Mix
1/2 c. "Extra": chocolate chips, m/m's, butterscotch chips, nuts, coconut, etc.

1/4 c. sugar

Preheat oven 350 º. Mix all ingredients together EXCEPT sugar. Shape into balls. Roll in sugar Place on ungreased cookie sheet. Flatten lightly. Bake 8-10 minutes.

A great recipe to make with kids. When David, Joan and Mark were younger, we would make this often. Each child created their own cookie combination, choosing the flavor of pudding and the"extra" they wanted. A batch will fit on a big cookie sheet. I also use this recipe in lab to introduce students to the concepts of measuring liquid and dry ingredients, and safely handling eggs. Plus it can be completed within a class period.
