1 can chicken broth
1 can beef broth
1 stick butter melted
1 8 oz. can tomato sauce
1/2 cup chopped yellow onion
1/2 cup chopped green bell pepper
1/2 cup chopped green onions
1 tsp.thyme
1/2 tsp. cayenne pepper (optional)
2 cups Uncle Bens converted rice
1 lb. smoked sausage, cut into bite-size cubes
2 cups pre-cooked Fajita chicken strips, cubed
1 lb. fresh shrimp, peeled
(may substitute ham seasoning for shrimp)

Directions:

Place all ingredients into a large oven proof baking sheet.
Mix well and cover with foil.
Bake in pre-heated 375º oven for 1 hour.
No Peeking! Rice will be mushy!!
Remove from oven after 1 hour and stir well. Uncover and bake an additional 20-25 minutes. Remove and stir again. Check rice and, if necessary, bake another 20 minutes until rice is done.
