2 sticks butter
2 large onions, chopped
1 large bell pepper, chopped
6 toes fresh garlic, chopped
1 bunch green onions, chopped
3 tbsp. flour
1 lb. Velveeta, cubed
1 pint half and half (or evaporated milk)
1 can Rotel tomatoes - mild or hot
2-12 oz. bags wide egg noodles (or noodles of choice)
Parmesan cheese - fresh grated

Boil pasta as directed, drain and set aside.
Over Medium heat: melt butter in saucepan. Saute onions,garlic, bell pepper, for 5-7 minutes or until tender.
Add seafood and green onions.
Cook on Medium-Low heat for about 10 minutes.
Add Rotel,undrained, and then add cheese.
Cook another 20-25 minutes on Low, stirring often.
In a large baking pan (or 2 small) cover cooked pasta with seafood sauce.
Sprinkle Parmesan cheese over entire top and cover with foil.
Bake 20 minutes in preheated oven at 350º.
