Ingredients: 1 14.5 oz. can crushed tomatoes 1 qt. water 1 medium onion, chopped 1 large potato, chopped 2-3 ribs celery, chopped 1 tbsp. salt 1 tbsp. Old Bay seafood seasoning by McCormick 1 8 oz. container vegetable stock (optional) 1/2 tsp. black pepper 1/2 lb. crab 16 oz. frozen mixed vegetables

Directions:Using a 2 or 3 quart pot, mix and bring to a slow boil all the soup ingredients except for the crab, frozen vegetables, and seasonings. Reduce heat and simmer for 30 minutes. Add frozen vegetables and bring back to bubble. Add crab and seasonings, then simmer at least another 30 minutes before serving.
Crab soup can be refrigerated after preparation and reheated. Like most soups, when allowed to set for a time the flavor of the soup intensifies, bringing out the sweet crab flavor and the Old Bay seasonings. A cup or bowl of crab soup with oyster crackers brightens up any cold or dreary day. |
